Begin at Koxinga Shrine, honoring Zheng Chenggong, the Ming loyalist general who founded Tainan as his base in 1662. First raised by local residents in his memory and formally consecrated in 1875, the shrine's present palace-style form dates to a 1964 reconstruction — its four painted door gods, unusually, are depicted with the pale skin and blue eyes of the Dutch traders Koxinga once drove from the island. From there, continue to a Tainan institution: Asha Restaurant, serving hand-crafted Taiwanese banquet dishes since 1940 — a kitchen that has hosted every Taiwanese president since Chiang Ching-kuo, and continues to host state dinners for visiting heads of state today. The day closes at a contemporary landmark: an eight-story building reimagined by acclaimed Japanese architect Sou Fujimoto, who translated his own wanderings through Tainan's back alleys into a maze-like white staircase, folding the city's street-level intimacy into a vertical journey through concrete and light.
